Quick Stir-fry

I love making a quick and easy stir fry for lunch or dinner. One of the easiest ways to throw together a delicious lunch is to buy the pre marinated tofu! I’m super thankful to have found this Black Bean Tofu by Ying Ying Soy Foods, sold through Mama Earth Organic. Ingredients

1/2 chopped onion

1-2 cloves finely diced garlic

diced ginger (optional)

Any veggies you like ( for this one I did asparagus and frozen peas)

pre cooked rice or fresh noodles (I love buckwheat noodles or brown & wild rice)

1 tsp soy sauce or coconut aminos

1/4 cup water

If making with noodles start a pot of water boiling and follow package directions. You’ll want your noodles to be ready around the same time as the veggies. I usually add them to the water around the same time as adding the veggies.

Heat pan with avocado, olive or coconut oil. Add onions and cook for 2 minutes, then add the garlic and ginger and cook for another minute. Add in your tofu and cook for a few more minutes. Then add in your veggies, soy sauce and water. Cook until veggies have softened but still have a crisp. Now it’s time to add your noodles or rice, stir well and serve. I love to add sesame seeds as a finishing touch.
