The kids are back in school and my back pain has finally started to ease up. I got some good news this week, The biologic medication I’m on will actually protect me from sever covid! Throughout the entire pandemic I believed ( and was told the opposite is true). I’m so thankful to all the doctors who studied and tracked covid in immune compromised individuals.
Once I got that news I immediately booked a massage, something I haven’t done since the good ole pre pandemic days. It was much needed, my back and shoulders were so tight and full of knots that the massage itself hurt and I was tender for days afterwards.
Now onto the actually point of this post…
I have an incredibly poor memory and have always had trouble with cooking. I can read a line of a recipe and by the time I get to the fridge forget what I was looking for, or how many eggs I require. So the thought of batch cooking seemed completely overwhelming!
I tried it out today and stole a system I use for baking. I get all the ingredients I need and put them out on the counter ( I may have forgotten a couple 😆). Then when I no longer require them I put them away before moving on to the next step. This allows me to see exactly what I’ve done already. This next tip may seem super obvious to most, chop up all the ingredients (for all the recipes) before you start cooking. I really don’t know how I didn’t realize this In my many years on this planet. Garbage bowls will save you a lot of walking or bending. Sharp knives make a world of a difference, so much gentler on painful hands. Muffin tins for meatballs, especially if they are turkey. Also choose recipes that have overlapping ingredients.
Oh and don’t forget to turn on the oven (I may or may not have done that lol).

It took just under 2 hours and now I have a lot of lunches and dinners for the week!
